At 0°F, food is safe forever. Nothing about time in a freezer makes food dangerous, because bacteria cannot multiply at that temperature. Every number you will see below — here or anywhere else — is an estimate of when the food stops being pleasant to eat.

What the numbers are actually measuring

Two processes run in a freezer, both slowly:

Drying. Water leaves the food as vapour and refreezes elsewhere in the package. The result is freezer burn — dry, greyish patches, leathery texture. Anything with a lot of surface area relative to its mass dries faster, which is why ground meat is at 3 months and a roast is at 9.

Fat oxidation. Fat reacts with oxygen even at 0°F, and oxidised fat tastes rancid. This explains every short window on the chart: bacon, sausage, ham, salmon, mackerel. Salt accelerates it, which is why cured pork is the shortest of all.

Notice what is not on that list: bacterial growth. It is not part of the calculation, because it does not happen down there. The drying half of it eventually becomes visible, and freezer burn is what that looks like on the pack. Freezing on the use-by date

You can freeze on the day, not after it. Think of freezing as a pause button rather than a rewind: the food comes out in the condition it went in. A pack frozen on its use-by date is still a pack at its use-by date, so it needs cooking the day it thaws rather than a few more days in the fridge.

Thawing in the fridge rather than on the counter matters for the same reason — the surface warms first, and the surface is where the bacteria are.

Making a chart usable

The catch with any storage chart is that it needs two numbers, and it only gives you one. The window is useless without a date, and the date is the part nobody records reliably at the end of a shopping trip.

Whatever system you use — marker on the bag, a note on the door, or Frostlog — the job is the same: capture the date the moment the food goes in. Everything after that is arithmetic.

Questions that come up

Can I freeze something on its use-by date?

Yes, on the day itself. Freezing stops the clock where it is — it does not turn back food that has already started to go. A pack frozen on its use-by date comes out of the freezer as a pack at its use-by date, so cook it the day you thaw it rather than putting it back in the fridge for later.

Why is cooked food a shorter window than the raw ingredients?

Cooking breaks down structure and introduces air, moisture and often fat throughout the dish rather than just at the surface. A frozen casserole dries and oxidises from the inside as well as the outside, so two to three months is where quality drops off — even though the chicken in it would have kept nine months raw.

Does freezing kill bacteria?

No. It stops them multiplying, which is not the same thing. Bacteria present when the food went in are still present when it comes out, and they resume once it thaws. This is why thawing in the fridge rather than on the counter matters, and why refreezing food that sat warm for hours is not a good idea.

How long can you freeze food in glass or mason jars?

As long as anything else — the container does not change the food's window. What changes is the risk to the jar: liquids expand as they freeze, so leave an inch of headspace and use straight-sided jars. Shouldered jars crack at the shoulder. Tempered glass designed for freezing is safer than a repurposed sauce jar.

Is there anything you should not freeze?
