What Temperature Should a Freezer Be, and Why 0°F
A freezer should sit at 0°F, which is −18°C. That is not a rounded suggestion: it is the temperature at which bacteria stop multiplying entirely, and it is the number every storage chart silently assumes. A few degrees warmer does not make food unsafe, but it shortens every quality window you have ever read.
The number
0°F, which is −18°C. Every cold storage chart you have ever read assumes it, including the FDA and USDA FoodKeeper tables that our storage windows come from. When a chart says twelve months for a whole chicken, it means twelve months at this temperature.
Two things happen at 0°F that do not happen at −12°C:
- Bacteria stop multiplying completely. They survive, dormant, and resume when the food thaws — but they do not grow. This is why frozen food is safe indefinitely rather than for a stated number of months.
- Water is fully frozen in nearly all foods. Above this, some liquid remains and keeps moving, which is what drives the drying that ends up as freezer burn.
What warmer actually costs

The point is that “safe” and “good” separate. A freezer at 10°F keeps food safe for years and ruins it in months, and nothing on the outside of the appliance tells you which one you have.
Checking a freezer that has no display
Most freezers, especially chest freezers and older uprights, have a dial marked 1 to 7 and nothing else. That dial is not a temperature.
An appliance thermometer costs a few dollars. Put it in the middle of the freezer, not near the door and not touching a wall, and read it after a night. Do it once when you move in, and again after any power cut — a freezer that has drifted never mentions it.
If it reads warm: check the door seal with a sheet of paper (it should be hard to pull out when the door is shut), give the back and vents room to breathe, and defrost if the ice inside is more than a centimetre thick. Ice is an insulator, not a sign of cold.
Why filling it helps
Frozen food is thermal mass. Every pack keeps its neighbours cold, so a full freezer recovers faster when the door opens and holds much longer when the power stops — about 48 hours full against 24 half-empty, which is the difference between keeping and throwing out after an outage.
This is the one case where jugs of water earn their space.
Temperature is half the answer
The chart needs two numbers: the temperature, which you set once, and the date the pack went in, which changes with every shop. The first is easy to get right and easy to forget to check. The second is the one nobody remembers, and it is what Frostlog keeps.
Questions that come up
Is −18°C the same as 0°F?
Close enough that both are quoted as the standard: −18°C is 0.4°F. Every cold storage chart, including the FDA and USDA FoodKeeper tables, assumes this temperature. When a chart says ground beef keeps four months, it means four months at 0°F — the number is not a property of the beef alone.
What happens if my freezer runs warmer?
Nothing sudden. Bacteria still do not grow until about 10°F, so the food stays safe. What changes is the speed of the two processes that ruin quality — moisture leaving the food and fat oxidising. At 10°F rather than 0°F both roughly double, so a four-month window becomes closer to two.
How do I check a freezer with no display?

Should I set it colder than 0°F to be safe?
